2021 Chardonnay
Karamoor’s fruit-forward style Chardonnay minimizes a strong oak influence by utilizing a fermentation in 50% neutral French oak barrels (25% new) and 50% in stainless steel. The wine spent 8.5 months in the barrels with the fermentation lees (sur lie), and during that time lees stirring in the barrel (batonnage) was performed every 2 weeks to create an increased mouth feel on the mid-palate. Malo-lactic fermentation in the barrels (~50% for the overall blend) also added to the depth and complexity along with the 15% overall new French oak for the final blend.
Rich and ripe tropical fruit aromas of pineapple along with hints of honey, butterscotch, and subtle notes of coconut from the oak influence, are supported by these same sweet flavors and a lovely balance of acidity on the finish.
